VINIFICATION

The grapes are moved to 50 hl fermenting vats, where they undergo alcoholic fermentation with daily racking using  a wooden “FUNGAU” for approximately 14 days. At the end of this phase the must is left for few more 12 days in contact with the skins to extract all the noble substances.
The wine is aged for two years in small oak barrels, one year in steel tanks and finally one year in the bottle.
We try to do wine decanting naturally by fall because not doing many processes we preserve in the ageing the characteristics that  the grapes have taken from the soil and with our everyday work.

THE WINE

The Barolo Corini-Pallaretta comes from quite high vineyards with more fresh temperatures giving the wine a lot of intensity. Complex bouquet of different red fruits and spices: a great Barolo that combines its complexity and integrity with an excellent elegance and harmony.
